Description

Certification/Farming: Organically grown. Chemical herbicides, fertilizers, or other plant protection chemicals are not used on the farm. Use vermicompost and composted manure, depending on the season, and only chicken manure that has received the OMRILIST organic certification. The garden uses additional biological products permitted by USDA organic farming standards (USA) depending on the season to ward off pests and diseases. A journal is kept of all garden cultivation for the purposes of crop rotation, intercropping, and soil enhancement.

Origin: Organica's organic farm in Xuan Thanh, Lam Dong Province, Vietnam.

Benefits: Big mustard greens, like other dark leafy greens, are packed with lots of fiber, vitamin B, and antioxidants that have a lot of health benefits. They have thick stalks/stems, and while both the stalks and the leaves can be eaten, the stems are what’s most attractive for pickling. When fermented and pickled, big mustard greens have the added benefits of healthy gut bacteria.

Instructions for use: This mustard can be pickled with the leaves and all, but cooks sometimes cut off the leaves and add them to soups while fresh. In some cases, they will be chopped off the leaves (or heavily trim) for pickling using only, so they might look a bit scraggly when you purchase them.

Pickled mustard greens, often referred to Vietnamese cuisines as "dua cai chua" or "cai be muoi dua" (literally sour mustard greens/cabbage), are similar in calories, carbs, and fiber as raw mustard greens. They have a slightly sour flavor and a nice crunch, perfect for simple stir-fries and soups.

Storage Instructions: Store in crisper drawers of the fridge.

Expiry date: Best to consume within 3 days.
